Grapes: 40% Cabernet Sauvignon, 40% Cabernet Franc and 20% Merlot
Color: dense, inky, very dark
Fragrance: very spicy, great complexity, dried fruits, hints of cocoa and vanilla.
Taste: potent, great lengthy with mature fruits and confiture flavours
Harvested before the other grapes, at the end of August and beginning of September. The grapes are carefully selected at the time of harvest and brought into the conservation room and settled on rush matting. As the weather is still hot, they dry quickly and perfectly with optimum results. Pressing is in the mid of December. Fermentation follows slowly thanks to indigenous yeasts after 20 days and lasts approximately 50 days. The grapes are further ripened as is traditional for Amarone and Recioto, and to adjust this wine, French oak barrels are used (Limousin, Allier, Tronçais). for the following 4 yeasrs the wine is assembled into medium Slavonian oak barrels. During the maturation phases, additional alcoholic fermentations take place.
